Giardiniera means “from the garden” and also what Italians call their mixed pickled vegetables. While Italians use vinegar to preserve this common pickled condiment, we are using fermentation to do the same thing without vinegar to add probiotics into the pickle mix. If you would order an Italian Beef Sandwich in Chicago you would find this condiment on the sandwich or right next to it for you to load it on yourself.
Our recipe for this ferment today included: Cauliflower, Red Onion, Carrot, Red Bell Pepper, Jalapeño, Cucumber, and Bay Leaf with a 3.6% Salt Brine with Unchlorinated Water.
